Having PMS once a month does have it's advantages...my family gets all kinds of goodies ;)
Yesterday, I blogged about the tell-tale signs of my monthly bout with PMS and Kelly left the following comment:
"Your signs are much different than mine... you seem to 'nest' for many of your signs!"
To tell you the truth, I had never really thought about it as 'nesting' and I told Kelly that I always looked at it as a big burst of energy. Over the years my DH and my sons have always teased that if you wanted to get something done...just wait until Mom is PMSing! Doesn't matter if it's a stern letter to a company for bad service or catching up on an art project or yardwork and housework...it's a standard joke around here ;) Let's get Mom to do it...but wait until the time is just right...he he he
Now-a-days these bursts of energy usually involve what I call Power Cooking (you know where I make like five things in one afternoon ;) and then me sending off care packages to all my family members...so I'm not hearing that much complaining about my monthly mood swings. DH has to put up with it but as my family all tease him when we get together by saying...no complaining cause you get to go home with the cook!
So today since I'm still on a MANIC high...I whipped up at few things for my son Mitchell and, my son and daughter in-law, Timothy and Ashley. First up were some Pot o'Gold Peanut Butter Cookies.
You can use my recipe here or use a mix and simply press in some chocolate caramel cups and holiday sprinkles...the minute they come out of the oven. Once they have cooled a bit...pop them in the refrigerator to set and harden up the chocolate candies before packaging them up for shipping.
These boxes that I am using are the large Muffin or Loaf Boxes that Michael's has been selling as part of their Paula Dean entertainment selection. I got these boxes around Christmas time and they are such a good deal, $2.99 for a package of two...even better when you use the weekly coupons ;) But I haven't seen this size since Christmas...only their smaller Cupcake Boxes. Also inside the boxes you can see that I've packed some Peanut Butter Marbled Brownies. Found this new recipe here (tell Lisa I sentcha ;)
Don't they look so yummy? I like to send brownies and peanut butter cookies because they ship well. As you can see here since I also made some Brownie Pops.
DH called them something else...and we were cracking ourselves up about it all night. Later on this week, I'll post about my experience making these Brownie Pops. These large Pretzel Bags were perfect for wrapping these up individually...and because I'm always loosing the twist ties...I simply tied a knot in the end of the bags. Easy! Peasy! Sometimes I even amaze myself...lol
Then I placed them inside the Paula Dean Cupcake Boxes, that I mentioned earlier, for safe keeping during their travels. These boxes also come two in a package for $2.99 and I think that they are the same price as the larger Muffin Boxes because they also include an insert (shown in the photo) to hold the cupcakes in place.
No matter which size box you use, what I love most about any of them is that they fit perfectly inside the US Postal Service's, Flat Rate Priority Boxes ;)
Once I slide in the Muffin and Cupcake Boxes...I add a bag of Party Mix because, after all, it's the best packing material EVER!
Simply stuff the Party Mix inside some ziploc bags and stuff it inside the Priority Boxes to keep all of your goodies safe and sound while in transit ;) Last month I shipped DoubleStuf Brownies, Sweetie Pie Pops, Party Mix and other goodies and the mail lady told me that if I had shipped one of my boxes, standard mail...then it would have cost me over $26.00! I have to say...you just can't beat $10.95 for a flat rate box STUFFED with lots of love Works-for-Me!

OMG, Peanut Butter Marble Brownies! I'm contemplating investing in a $400 plane ticket just to come to NC and grab a few!
If DH and you were thinking what I'm thinking about those brownie pops then we are definitely related!

I can't read these posts when i'm on a diet....now all I want is peanut butter! OH NO>>>>>> It's funny, I just emailed Cortney a recipe for some peanbutter cup cookies that reminded me of the ones from Fresh Market!
