Baby Back Ribs were on sale this week again at my favorite grocery store...yum! As I have showed you all before, I always slow roast my ribs in the oven for a few hours to cook the meat so that it falls off the bones. Then I brown them up and add some extra sauce on the grill...
Considering the high temperatures that we have been having here lately, I wasn't exactly excited about turning my oven on...even at the low temperature of 275 degrees. SO...for today's TYPICAL TUESDAY...I'm showing you how I maximized my oven's heat...I decided to roast some potatoes and onions at the same time...yep...I'm power cooking once again ;+
So I sliced up about 4 lbs. of red potatoes, added two, chopped, sweet vi-dalia onions and tossed them in olive oil and added lots of salt and pepper. This is similar to the potatoe packets that I do on the grill...
...but, since I'm slow-roasting them in the oven with the ribs...then, I just throw them in a pan and cover it with foil to hold the heat in. THEN, put them in the oven with the ribs for a couple of hours until they are fork tender and golden...the onions make your house smell wonderful...along with the rib sauce...wish we had smell-a-vision ;)
NOTHING else will fit in this oven...at least not if you want it to cook right...lol
Now...I had plans to pop the ribs on the grill to burn off any extra fat and to throw some of the potatoes in a grill pan to brown them up after they were roasted in the oven...then this happened...
the sky's opened up...after days of threatening storms that have blown on by us...
DH says the rain came because we wanted to use the grill...lol NO WAY am I standing out in the rain with an umbrella cooking' on the grill...NO WAY!
So...I uncovered the potatoes and the ribs and turned the oven up to 400 degrees! Then I basted the ribs with more sauce and put BOTH, the potatoes and the ribs, back into the HOT oven for another 15 minutes to caramelize the ribs and brown-up the tops of the potatoes.
All ready...WAIT...something is missing...
NOW we're ready...just add a couple of cold ones...SO good...Yummy in my Tummy ;}
AND because I maximized my oven's heat and powered cooked...we have potatoes for hash-browns and potato salad if I wanted to mix up a small batch from the left-overs. The ribs...well we like those cold as a snack or with some vegetables for another meal...I know beer doesn't qualify as a vegetable ;) Hope this inspires you to think about making the best use of your time, your energy in your home as well as your food shoppingfor the week.
