This week I'm going to share with you a wonderful cooking technique that I learned a few years ago from a fellow co-worker (Thanks Ken ;) when Pre-cooked Bacon first became available in the grocery stores. I was lamenting at work one day about how easy this product was...and so much cleaner on my kitchen because once you got the package home the instructions called for "micro-waving" the bacon before using it for the optimal taste and crispiness...cool beans...I thought! My co-workers just laughed at me and said that they've been micro-waving bacon for years. What? I asked...without a fancy micro-wave cooking dish? Yes...they simply place their bacon on paper towels and micro-wave it until it done to their liking. SO...ever since then I've been cooking my bacon this way even thought I do NOT advise cooking anything in a micro-wave ever since learning that the inventor himself does not use one in his home because he wasn't sure how the micro-waves ultimately affected the molecules in our food. THEN the health industry started advising that you only use glass dishes and NOT plastic when cooking in them. OH BOY ;} So once a month, or less, I cook my bacon in the micro-wave with glass plates and paper towels and try not to think about the restructuring of the bacon molecules...maybe restructuring the bacon fat is a good thang ;)
