I modified the original recipe ever so slightly to make it a healthier (gluten free :) recipe.
Gather your ingredients:
- 1 medium zucchini, stems and tops removed
- 1 egg lightly beaten
- 1 teaspoon dried parsley leaves
- 1 teaspoon dried tarragon
- 1/4 teaspoon nutmeg
- 1/2 cup grated Parmesan cheese
- 1/3 cup oatmeal flour
- 1/2 tsp baking powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper to taste
- 2-3 tablespoons Grapeseed oil
Combine all of the ingredients except for the zucchini in a large bowl. Whisk to form a batter, removing large lumps, about 1-2 minutes.
The original recipe called for grating your zucchini directly into the batter bowl because you need the added moisture from the zucchini. However...if you are like me...and have your zucchini leftover and drained for baking then you will need to add some water to your batter. I added a couple of tablespoons to get it to the desired consistency...mushy like meatloaf ;}
Add the grapeseed oil to a heavy skillet and heat the oil over medium-high heat. Using a 1/4-cup measuring cup, form 4-5 round, flat patties (like burgers ;) and place them into your hot pan.
Cook the patties for 2-3 minutes on each side until lightly browned.
If you have a press...then by all means use it and press your fritters down to get them real crispy ;}
Remove the crispy fritters from the pan and drain on paper towels. Sprinkle liberally with sea salt while cooling.
We served them up with some of our leftover Green Pea Soup...and topped the fritters with tons of our favorite hot sauce.
Cholula Hot Sauce...OMG...once you try it you will never be the same ;}
Hubby and I fought over who was going to finish these fritters...they were THAT GOOD! In the end we drew a truce and split the fifth one in half ;} I can't tell you how excited I am that I now have a great new recipe for Zucchini...a recipe that turns it into a great side dish or snack!

I never like zucchini (or eggplant...yuck) until now...these fritters taste like hash browns...don't even know the zucchini is in there...very crunchy and a little sweet and so good with the hot sauce...really you'd have to try this one ;}
