It's raining, it's pouring...it's tornado warnings {eekkk :} here at the Love Shack.
So I'm finding myself stuck in the house with the urge to make something warm and fuzzy...and I'm inspired to make something green...
Don't you just love my new pot? I found this beauty the other day on sale at T.J. Maxx and it is just perfect for trying this bread recipe that I've pinned a while ago ;}
But since I'm still on a restricted diet and can't have bread/solid foods right now...I'm still on the soup wagon...and just like last week when I was craving Bean w'Bacon Soup...today I am looking for a "better for you" version of Campbell's Green Pea Soup.
So after checking my freezer and pantry..this is what I created:
Gather your ingredients:
- 1 cup diced yellow/white onion (or 1 medium onion)
- 1-2 links all-natural, Chicken Kielbasa links; diced into small coin pieces
- 2 cups organic Beef Stock
- 2 cups filtered water
- 1 Tablespoon organic Roasted Garlic
- 1/2-1 teaspoon organic Black Pepper (depending on how much heat your family prefers ;)
- 1 teaspoon Sea Salt
- 2 16 oz. bags frozen peas
- 1 Tablespoon Grapeseed oil
Pour the grapeseed oil into a large stock-pot and bring it up to medium-high heat. Then add the onions and garlic and reduce the heat to medium and saute the veggies for four to five minutes until the onions are carmelized
Add the chopped kielbasa and continue to saute it for about five minutes to render out the flavor and fat.
Remove most of the kielbasa and set aside to chop up as a garnish for your completed soup.
Then add the 2 cups of beef stock, 2 cups filtered water, the two bags of frozen peas and the salt and pepper.
Bring the entire pot to a full boil and then lower the heat, cover and simmer for 15-20 minutes.
Remove the pan from the heat and strain your peas, onions and bits of leftover kielbasa into your blender. Be sure to remove the insert from your blender lid before blending hot items...and simply use a kitchen towel to cover the hole and to keep splatters at bay ;}
Continue adding the hot juices/liquids and pulse and puree your peas until it is smooth and creamy and is at the desired consistency that you prefer.
We like ours really smooooth......
Now you can pour the pureed pea mixture back into the pot and return it to the stove and to the heat...stirring it all together and bringing it once again to a full bowl.
Now it's ready to serve with the chopped kielbasa and tons of fresh black pepper sprinkled all over the top.
So darn good if I don't say so myself ;} I seriously do not know why our mothers EVER bought into the CANNED versions of these soups! It really is so sad that they bought into the marketing and actually believed {let alone trusted ;} that these canned versions were/are a healthy, conveinent alternatives...not! The cost and taste of making your own soups from scratch simply cannot be considered an equal match for the salty, stale canned versions.
