Last week it was all about the tomatos...tomatoes... and regardless of how you say it...having them fresh this time of year is all that matters! We've been eating left-over roasted tomato n'pepper soup all week with grilled ham n'cheese sliders...yum!
Have you seen these new mini Sandwich Thins by Arnold? How cute are they...I ask you? AND then to top it all off...each one is only 50 calories...brilliant I tell you...just brilliant! {Please be advised that I'm not being compensated in any manner by Arnold...this is simply my humble opinion :}
So cute and it's really fun to use them to make your own minis with your favorite fillings...like we did here for our grilled ham n'cheese sliders :}
We start by buttering the flat sides {the actual inside part of the sandwich thins ;} of the bread and then adding spicy brown mustard to the opposite sides where the meat and cheese will go next.
Thick slices of sharp cheddar cheese and black forest ham...it's baked but is less salty than your traditional baked/boil ham from the deli.
Add the sandwich thins tops and then flip the sandwiches over to brown both sides...
This is when I like to pull out my handy, dandy grill press {show off I know :} and squish the dickens out of my sandwiches...I love the cheese to melt and ooooozzzzeee out of the sides and the bread to be toasted all the way through...cause that's just how we grill here at the Love Shack ;}

Perhaps I was channeling The Pioneer Woman this week...I don't know ;} But she was out in her garden this week, in her premiere episode on the food network, gathering some herbs to marinate with fresh tomatoes. Not that we have a huge garden...nope...we've got a pot on the counter. But we still appreciate throwing some fresh basil and tomatoes onto a pizza pie...more comfort food!
Simple is best...so we slice up some roma tomatoes...chop some fresh basil leaves and top it all off with deep layers of fresh mozzarella and parmesan cheese.
Then pop it into a 400-degree, pre-heated oven, for 20 minutes or until it's all golden brown and bubbly.
We love to slice and serve it up with balsamic vinegar and a bottle of red wine...great way to spend a Friday night with DH watching all of our favorite shows that we've DVR'd (new verb ;) all week from the Food Network, the Cooking channel and the Travel channel...lol

Those look yummy! I'm coming around to tomatoes more now that ever before, still don't want them raw on salads, but I can take them cooked a bit now. Carl and I spent our Friday watching movies on the couch, it was nice and relaxing!

Yummy!!!! This has made me crave some pizza and also broiled tomatoes with blue cheese!!!! yummmy - Debbie Gave me more of her wonderful tomatoes today! :) Happy Camper
