Magically Delicious because they are NO BAKE
It's Foodie Friday today and I'm Lovin' It because this is such a quick and easy recipe that tastes somewhat like the original Magic Bars but are easier to make because they are no bake like S'mores Bars. You can make them holiday related by adding Green Marshmallows (if you can find them) or by simply sprinkling them with holiday sprinkles...either way they are Magically Delicious ;)
Gather Your Ingredients:
- 1 ½ packs of plain graham crackers, crushed in small pieces (not crumbs)
- 2 cups semi-sweet chocolate chips (separated)
- 1 cup butter (2 sticks)
- 2 Tablespoons sugar
- 2 Tablespoons cocoa powder
- 2 Tablespoons honey
- 1 cups mini marshmallows (or large cut into quarters)
- 1 cup chopped walnuts
- ¾ cup shredded sweetened coconut
- Holiday Sprinkles for the top (optional)
Get started by lining an 8 x 8 pan with foil and grease with butter.
Place graham crackers into a large plastic bag…
...and break into small pieces, using your hands or rolling pin (if you’ve had a hard day ;)
In a large, deep sauce pan, heat on low, 1 cup of the chocolate chips, the two sticks of butter, the 2 tablespoons of sugar, the 2 tablespoons of cocoa powder, and the 2 tablespoons of honey.
Keep stirring until melted and everything is smooth and all incorporated.
Remove the pan from heat and let cool slightly.
Stir crushed crackers into chocolate mix until well mixed and crackers are covered well in chocolate.
Add marshmallows and mix until covered in chocolate, then stir in remaining 1 cup of chocolate chips.
Finally add the walnuts and coconut...
...making sure that everything is covered in the chocolate ;)
Pour the mixture into the lined and greased pan and lightly press it into the pan with a spatula. Sprinkle top with holiday candy sprinkles if you like.
Chill in refrigerator for 2-3 hours until they are all firm and set so you can cut them. Then alls you have to do is LIFT the foil right up and out of the pan...easy peasy!
Then you can cut them into small square bars for individual serving size. They are a big messy so you might want to place them into mini-muffin paper cups for serving...or you can just eat them right off of your cutting board ;)
These bars are chewy with the nuts, coconut and marshmallows and very crumbly...yet the are not as sweet as the original Magic Cookie Bar recipe. Probably because they do not have sweetened condensed milk in the ingredients and I find them to be Magically Delicious...hope you do to!
Hope everyone has a wonderful weekend.
Fondly, Roberta
