This week for Foodie Friday, Michael Lee is asking us all to share any lessons that we have learned along the way. THE biggest life lesson I've learned is that things happen for a reason...we may not always know what the reasons are at the time...but eventually we do figure them out and it's a real revelation! Now that I know this, I do not worry about things because I know that this too shall pass! In the meantime I focus on what I know for surein my life, which is my family, and I try to make things better for them. Usually by cooking for them and making them their favorite things like my sweet n'spicy meatballs for Valentines Day ;)
GATHER YOUR INGREDIENTS:
- 2-3 lbs. Pre-cooked Frozen Plain Meatballs,
- 1 20 oz. can Pineapple Tidbits, drained, juice reserved
- 1 cup Dijon Mustard
- 1 medium, diced white/yellow onion
- 2 teaspoons Roasted Garlic
- Sweet n’Spicy Sauce:
- 2 cups ketchup
- Reserved Pineapple Juice
- 2 Tablespoons Worcestershire Sauce
- ¼ cup White Vinegar
- ½ cup Sugar
- 1 Tablespoon Black Pepper
Remove the Meatballs from the store packaging and place in a large bowl. Open the can of pineapple tidbits and drain and reserve the juice.
Finely dice the onion and add it to the bowl with the meatballs along with the pineapple tidbits, and the dijon mustard.
Combine all the ingredients until the meatballs are completely covered. Once the meatballs have been thoroughly coated add them to a large baking/roasting pan. {Please note that you can save yourself a step and washing a bowl by just combining everything right in your roasting pan...I obviously wasn't thinking ;}
In another bowl or saucepan (note that it doesn't have to be heated unless you want to ;) combine the ketchup, worcestershire sauce, white vinegar, sugar, pineapple juice and black pepper and stir until the sugar is dissolved.
Pour the sauce over the meatballs in the roasting pan and stir to completely coat the meatballs.
Place in a 350 degree, pre-heated oven for one hour. Stirring once or twice during the one-hour cooking time to keep the meatballs from drying out.
Serve the meatballs with additional pineapple chunks on toothpicks as an appetizer or with broccoli and brown rice as a meal…yummy in my tummy!
