Well I promised my niece, Cortney that I'd post this recipe for Spicy Orange Stew Beef this week for Foodie Friday since I've had the picture up on my sidebar for over a week ;)
SO...GATHER YOUR INGREDIENTS:
- 2-3 lbs. Cubed Stew Beef
- 2 Whole Oranges (or 1 cup orange juice)
- 1 Tablespoon Grated Orange Rind
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- 1 Medium Onion, finely chopped
- 1 Egg White
- 2 Tablespoons Cornstarch
- 3 Tablespoons Soy Sauce
- 1 teaspoon roasted Garlic
- 1 Tablespoon Chili puree with Garlic
- 1 Tablespoon Dijon Mustard
- 1 Can Beef Consume (your favorite brand/flavor)
- ½ teaspoon Ground Ginger
- ½ teaspoon Red Pepper Flakes
- 2 Tablespoons Brown Sugar
- 1 pkg. frozen Broccoli
- Olive Oil as needed
If using fresh oranges…use a zester or grater to remove the zest from the orange skin until you have 1 tablespoon. Then squeeze the juice from at least two fresh oranges for one cup of orange juice and set it aside. Now you are ready to remove the Stew Beef from the store packaging and rinse and pat dry with paper towels. Place in a deep bowl and season well with fresh ground salt and pepper.
Separate your egg white…with a super…duper…egg white separator…or use the shells…whatever works for you ;)
Combine the egg white with 1 tablespoon cornstarch.
Pour the combined egg white/cornstarch mixture over the stew beef and coat the beef well…use your hands ;)
Once the beef has been thoroughly coated then add it to a pre-heated skillet with olive oil.
Be sure to brown all sides of the beef to seal in the juices…yum…
In the meantime, combine the soy sauce, garlic, chili puree with garlic, Dijon mustard, beef consume, ginger, red pepper flakes, brown sugar, and the grated orange rind and pour it over the stew beef.
Bring the mixture to a boil and then pour it into a crock pot. Add more oil to the skillet and sauté the chopped onion until they are soft and caramelized.
Then add them to the crock pot as well. Set the crock pot on low and let it set for 5-6 hours or more depending on how tender you want your stew beef.
When the stew beef is at your desired tenderness, remove the beef and set it aside. Next combine the orange juice, 1 tablespoon cornstarch and salt and pepper in a shaker. Pour the juices from the crock pot into a pot on the stove, add the shaken orange juice mixture and turn the heat up to high to bring it all to a boil. Constantly stir yoursauce once it comes to a full boil and reduce the heat so that the sauce reduces and thickens. This should take about 2-3 minutes tops. In the meantime you can be preparing your package of frozen broccoli.
OKAY now can pour your reduced sauce right on top of stew beef…serve with broccoli and brown rice…yum!
We left the stew beef in the crock pot all day...over 8 hours and it was so tender that we could cut it with a fork.
