For the life of me...I have never understood people who have an aversion to eating left-overs? Are you one of them? Is it because your parents were descendants of the great depression (not really you know...they just liked to make us feel guilty ;} Did they constantly tell you to stop wasting food and/or that there were starving people in China? SO now you are rebelling cause you have your own house and your own rules and by God you have taken a vow to NEVER eat another left-over! Well I've got a news flash for you...you are really missing out on a lot of great meals!
Today for Foodie Friday, I'm going to show you how you can throw together a delicious Chicken & Spinach Salad by using your left-over breaded, chicken breast/tenders:
So I gathered everything and then proceeded to slice up the left-over breaded chicken breast into bite-sized pieces and washed and drained my spinach leaves.
Next, because there was breading on my chicken I wanted to crisp it up under the broiler. So I simply spread out the sliced up pieces (on the left-over foil ;) and laid it on a sheet pan under the broiler.
The hardest part of making this meal is watching the chicken so that it doesn't burn under the broiler ;)
In less than five minutes the chicken was crisp and the spinach leaves were drained so that I could assemble our salads ;)
Add your favorite dressing and it just doesn't get any better...yummy in my tummy!
Another great way to STRETCH this would be to roll it up in wraps...because I know a lot of guys out there who would look at this as JUST A SALAD...and grumble...that's not a meal! I know cause I raised all boys ;}
Okay I have to say it...It's Not Rocket Science! You can do this! You just have to start thinking differently about those left-overs! I know that I'm onto something here because Rachel Ray now has a new show out on the old Fine Living Network now called...The Cooking Channel:

GUESS what people...it will all be left-overs ;) But seriously...left-overs to me are always better because the seasonings have sunk down into the dish and things are actually more flavorful.
