Last weekend my youngest son Timothy, and his lovely wife Ashley, flew home from Pittsburgh, PA to celebrate the Easter holiday with family. Tim's birthday is also this month, April 13th and so I wanted to make him some of his favorite dishes while he was home with us. We had Pulled Taco Pork, Barbecue Beans, Rice, Spicy Chicken Tenders with a Sweet/Hot Chili Sauce and one of his favorite deserts...Cookoo Cookies.
Now I usually only make these cookies for Thanksgiving and Christmas because they take a little more time that most cookie recipes...that is because you have to sift the dry ingredients to keep them light and chewy. That combined with the fact that you have to back them twice and glaze them after-wards...but they are so WORTH IT! This recipe came from an old high-school friend, Candy Downs and I have treasured it ever since...and so have my boys!
Yummy in my Tummy: Cookoo Cookies
...gather all your ingredients...and will power...
CREAM TOGETHER:
½ cup shortening
1 cup sugar
1 beaten egg, room temperature
SHIFTED INGREDIENTS:
1 ¾ cups flour
½ teaspoon baking soda
½ teaspoon salt
½ cup cocoa
ADDITIONAL INGREDIENTS:
½ cup milk
1 teaspoon vanilla
2 dozen large marshmallows; cut in half
COCOA GLAZE:
½ cup cocoa
1½ cups confectioner’s sugar
3 tablespoons water
½ cup melted butter
Sift together the flour, baking soda, salt and cocoa
(note that if you do not own a "sifter" then you can use a colander over a bowl...as my daughter in-law Ashely pointed out...thanks Ashley :D
NOT ONCE...NOT TWICE...
BUT for a total of three times. Set bowl aside.
Next...cut up 24 large marshmallows in half and place in another bowl and set aside...
In another small bowl, beat your room temperature egg.
Next: cream together shortening and sugar in mixer bowl and then add the beaten egg.
NEXT add the sifted dry ingredients; alternating with the milk into your creamed mixture.
Beat well then add the vanilla. Dough will be sticky.
Just wanted to show you all a close-up of my hand mixer...it is over 30 years old and it still works like a charm...I think I paid $7.99 for this thing...oh my! I really need to win me one of those fantastic Kitchen-aide Mixers that all the famous bloggers are always giving away on their blogs...some day :D
I told you the dough was sticky...just like brownie batter...and this what these cookies taste like :D
Drop by SMALL rounded teaspoonfuls (otherwise you will have too many marshmallows like me :} onto greased or parchment lined cookie sheets. Bake at 375 degrees for 10 minutes.
Take cookie sheets out of the oven...
...and quickly press half a marshmallow gently into the center of each cookie.
Place cookie sheets back into the over and bake for an additional 2 minutes. Making sure marshmallows doe not putt up too high or turn brown.
Cool on racks; meanwhile prepare cocoa glaze.
Sift together the cocoa and the confectioner’s sugar, only once. Add the water and the butter and combine until all incorporated.
Glaze should be shinny and smooth and ready to pour over cookies.

YUMMY...Ashley and I waited patiently, all afternoon for Tim to get back from running errand with his Dad, Kevin...before we could try them! AFTER ALL they were for Tim for his Birthday and we wanted him to have the first ONE...man was that tough on us to look at these beauties all afternoon!
But it was worth the wait and Tim really enjoyed his Birthday dinner and desert! I wrapped up as many as I could get the kids to take with them to snack on during their trip back to Pittsburgh...and the rest were all gone by Wednesday...ha!
