So now we will talk about what Works-for-Me this Wednesday...besides a stamp sale ;)
Stove Top Stuffing and boneless pork chops...that is what Works-for-Me on those crazy busy nights when you have got to put dinner on the table in less that 30 minutes. I for one am NOT a stuffing snob and there may be lots of salt and additives in the Stove Top Stuffing...but it is still better than running through the drive-through of most restaurants...kapish!
Simply bring your water and butter to a boil in a covered saucepan...
Once the water comes to a boil, turn off the burner and add in which ever flavor you choose of the Stove Top Stuffing...in this case I chose PORK ;)
Once you've stirred in the stuffing mix, then simply place a cover on your pot and place the pot on the back burner and set the timer for 5 minutes. While you are waiting for your stuffing to perculate...rinse off your pork chops and dry them with a paper towel.
Then simply place them in the bottom of a pie plate or any type of deep casserole dish. Season them with lots of pepper and a little bit of salt...remember the stuffing has enough sodium. ANOTHER great tip I have to share on great pork chops is to buy a pork loin and cut your own center-cut, boneless chops. Whenever my store has them on sale, either BOGOF or $1.99 a pound for pork loin...I usually buy two. ONE goes in the crock-pot for pulled pork and the other gets cut up into nice, thick center-cut chops. THIS is such a great deal...have you priced center-cut, boneless chops at your grocery store lately? I haven't seen any under $4.99 a pound for the quality and thickness that I get when I cut my own. Then I simply place them in freezer bags in sets of 4 for DH and I and usually we only eat one a piece for dinner and have left-overs for the next day's lunch...its SUCH a good thang ;)
Now you are just waiting for the 5-minute timer to go off so that you can FLUFF your stuffing with a fork...
Simply mound your stuffing on top of your pork chops...usually one box will cover up to six chops easily...but since I've only got four...my MOUNDS are big ;)
Pop the chops into a pre-heated 350 degree oven and set the timer for 20 minutes. While the chops are cooking I usually make my vegetable...in today's case it is sauteed mushrooms and onions. IF I HAD some fresh, button mushrooms on hand I would have pulled the stems and placed the mushroom caps right into the dish with the chops and added some stuffing inside the caps as well. Then I would have chopped the stems and sauteed them with an onion while the chops and caps were baking ;)
Now I like my mushrooms and onions sauteed REALLY WELL...so I keep the burner on medium and slowly saute them the entire time the chops are in the oven.
Oh my...look how good they look...right out of the oven! The stuffing gets all nice and crusty on the top and stays moist in the middle and it also keeps the chops from drying out. Test your chops by cutting them in the middle and be sure that the juice all run clear...PINK pork is not a good thang ;)
No need for potatoes...but if your family likes more then simply steam another vegetable like cauliflower or broccoli to fill them up. Right now I'm off to eat leftover for lunch...

Yum! These chops look delicious! I think Carl would love this meal casue he loves mushrooms. Now if he'd get home at a decent time of night maybe I could cook for him. LOL!
