That's right...December 16th is National Chocolate Cover Anything Day and we woke up to this...
Yep...someone up above didn't get the official memo...
Like anyone needs an excuse to cover ANYTHING in chocolate..but at $2 bucks a pop I decided to make my own dunking sticks...only I call them Chocolate Covered SPOONS ;)
When I saw this article in my magazine the other day, I automatically thought about making some chocolate covered spoons to go into my recycled jars (with my fancy, smancy chalkboard labels;) That along with some hot-cocoa mix and gingerbread flavored marshmallow puffs it makes a really nice set that I'm getting together to mail to my sister and her family. They live in New Hampshire and love hot chocolate during their cold winters...all-though lately we need it just as much here in NC...lol
ANYTHING covered in chocolate is perfect for my sister's family because my brother-in-law is allergic to peanuts...so much so that even if he smells peanut butter on my sister's breath he starts breaking out. SO...I decided to make them a few more treats...covered in chocolate!
While browsing on-line, I found this recipe for covering ritz crackers in semi-sweet chocolate and peppermint extract for the holidays. The recipe sounded so simple and easy that I had to try it!
So first you have to crush some candy-canes...which was a treat for me because after running around Wal-Mart and then Food Lion to find the peppermint extract I need to whale on something...
So while I was melting the chocolate in the microwave, I took 40 whacks with my hammer ;)
Then I proceeded to hand-dip the ritz crackers into the chocolate...BUT here is a TIP for you in case you try these...dip the bottom then the top and scrap the bottoms across the edge of the bowl. This way they don't get too slippery to handle and puddle on the wax paper as you lay them out to cool. Then sprinkle the tops with the crushed candy canes or any other sprinkles or sugars that you might have on hand.
Here is another TIP...don't squeeze too hard onto the crackers as you are scrapping the bottoms on your bowl or you will crush your crackers and you end up with a crumbly mess like this...
That's okay...DH will eat it...he's my TEST DUMMY ;) ALSO we discovered...that nonpareils are not good on these crackers...because they just about break your teeth!
All said and done, I ended up with 36 chocolate covered crackers...and had a few left in the ritz cracker sleeve/package. I might have been able to cover all of them if I had been more careful in the beginning and started scraping the bottoms right away. So off into the fridge went the trays to completely set the chocolate before I place them in more recycled pringle cans for shipping tomorrow ;)
So I was on a roll with National Chocolate Covered ANYTHING Day so I pulled out some more chocolate wafers and while they were melting in the mircrowave...I took another 40 whacks...poor M&M's ;)
Then once the wafers where completely melted and smooth...I grabbed some pretzel rods...
...and dipped them in the chocolate and then rolled them in the crushed M&M's...yummy!
Here is another TIP...let the melted chocolate cool down a bit before dipping your pretzels into it because if it's too warm it just drips off and it's very hard to roll into your crushed bits! I think I created a new candy bar in my crushed M&M's with all the chocolate that dripped off...lol
Well, I think that I'm going to call these WISH STICKS for the holidays!
