Lately...I have been on a BIG lemon kick and I tell ya...I've been using them on everything! This past week I've been making, batch after batch of browned, lemon-butter sauce to layer onto grilled chicken breasts and cheese-stuffed ravioli's...yummy!
Since I've been talking about it so much...today I decided to take photos and to WRITE down the recipe for my family. This is another one of those dishes that I just throw together....and I've never really followed a recipe...which drives my family nuts!
Gather your ingredients:
2-4 Boneless skinless chicken breasts
1 Package Frozen Ravioli or Tortellini
1-2 Lemons
1-2 Tablespoons Butter {rule of thumb: one tablespoon for every lemon ;}
Dash of Olive Oil
Sea Salt & Fresh Ground Pepper
Shaved/Shredded Parmesan Cheese (or goat cheese)
The best part of this recipe is that it is fast and easy...less than 20 minutes from stove to plate...and that it only takes two pans to cook an entire meal. So first things first...bring some water to boil in a saucepot big enough to hold your bag of pasta.
Last week after vacationing in Charleston we came home to pretty much...empty cupboards. At first, I thought that this was NOT such a good thing since our taste buds had been spoiled with all of the fantastic food that we had during our stay. So since I just wasn't in the mood to leave the house again...especially to go grocery shopping...I was forced to get real resourcefulwith what I had on hand ;} OMG...we ended up liking this recipe so much that I had to make a double batch of chops just to get our fix!
Spicy Marinated Balsamic & Brown Sugar Glazed Pork Chops
Gather your ingredients:
1-2 lbs. pork boneless pork chops
1 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon chopped, roasted garlic
1/4 cup olive oil
1 gallon-size ziploc bag or glass bowl w/lid
Dash of grapeseed oil (or any oil that takes high tempertures like canola oil)
This is an update to this post because we were so pleased with the results of this recipe that we have already made this recipe two more times since I originally posted it on February 12th. We love it so much that I want to include it in Tidymom's second annual soup extravaganza, Soupapalooza (Feb. 28-Mar. 5)
If I don't SAY so myself...I know that DH agrees with me...he says "it's perfect!"
For some time now we have been toying with the idea of trying to create our own version of Hot n'Sour Soup here at the Love Shack. It's one of our favorite things on the menu at P.F. Chang's...along with their lettuce wraps...yummy!
Then last week we were watching Dr. Oz and he had Chef Ming Tsai on the show to share his Shitake Hot and Sour Soup recipewhich is suppose to help boost your immunity. We felt like Chef Ming Tsai's recipe was the best that we have seen, when it came to the fresh, organic ingredients and that he made it looks so quick and easy to make. So after picking up the ingredients at Trader Joe's on Friday, we decided to try our own version today. That would be with chicken breast in lieu of tofu...just not a fan of soybeans...and sans the carrots since I'm allergic to them ;}
Last week it was all about the tomatos...tomatoes...and regardless of how you say it...having them fresh this time of year is all that matters! We've been eating left-over roasted tomato n'pepper soup all week with grilled ham n'cheese sliders...yum!
Have you seen these new miniSandwich Thins by Arnold? How cute are they...I ask you? AND then to top it all off...each one is only 50 calories...brilliant I tell you...just brilliant! {Please be advised that I'm not being compensated in any manner by Arnold...this is simply my humble opinion :}

However you pronounce it...they are in season right now and we sure have been getting our fill here at the Love Shack. When we travel to Charlotte, we usually stay at the Embassy Suites at Concord Mills and always enjoy the restaurant there...Rocky River Grille. It is so rare to find a good hotel with a decent restaurant and what really makes the Grille so good is that they use fresh, locally sustained, ingredients and everything is cooked to order. Almost daily, they deep fry their own turkey breasts for the best Turkey Clubs and BLT-sandwiches around. Add to that...their home-made tomato bisque and we are very happy travelers.
So this week we decided to try and replicate the Grille's tomato bisque and I have to say...we were pleasantly surprised ;}
Roasted Pepper and Tomato Bisque
Gather Your Ingredients:
3 Pounds ripe, organic Tomatoes, cored and quartered
1 Pound organic Bell Peppers (Red, Orange or Yellow)
Oh my...after being on the road for over 25 days last month and by the end of it all feeling like what we call "food-ed out" {the state we are in when we are forced to eat food prepared out of our home ;} I am really glad that we made an effort to make better choices when we ordered off the menus. I just found this list today and HAD TO share it with you and basically re-post it here on my blog so that I have it close at hand at all times. All of these items are loaded with so much fat, sugar, and sodium that eating any of the foods in this article on a daily basis could destroy all of our hard work and best intentions of eating healthy.

Carl’s Jr. Six Dollar Guacamole Bacon Burger with Medium Natural Cut Fries and 32-oz Coke
1,810 calories - 92 g fat (29.5 g saturated, 2 g trans) - 3,450 mg sodium
Of all the gut-growing, heart-threatening, life-shortening burgers in the drive-thru world, there is none whose damage to your general well-being is as potentially catastrophic as this. A bit of perspective is in order: This meal has the caloric equivalent of 9 Krispy Kreme Original Glazed doughnuts, the saturated fat equivalent of 30 strips of bacon, and the salt equivalent of 10 large orders of McDonald’s French fries!

Nothing makes me happier than see a big batch of Party Mix spread out to cool on my kitchen counter...
WELL...almost...because savings loads of mola with coupons at CVS also does it for me ;)
This week CVS has some fantastic deals on vitamins (buy one get one free), Hershey's candies (bogof), Visine eye care products (bogof), V8 juices (3/$7.00), CVS brand party peanuts (2/$4.00) JUsT to name a few. THEN when you combine them with coupons you can save over 50% like I did. All of the products in the above photo had a retail value of $348.27 (vitamins and cold medicines add up quickly ;) The savings with my CVS card totaled $130.81; my total coupon savings $36.10 and then add the tax savings of $12.51 and that adds up to a total savings of $179.42. With a total out of pocket amount of $168.85 for $348.27 worth of products...thats over 52% in savings!
Anybody want to party?
Well...maybe next time...because right now this party mix is getting boxed up in a few care packages for some family birthdays this coming week. But you all can find all you need to put make your own party mix and what everelse you might need for after the party at your local CVS store.

Geek....geek...geek! Can you hear the warning sounds now? A few weeks ago my sweet niece, Cortney, turned me onto the extreme coupon site, Stockpiling Moms. They were featuring the Coupon Clutch so I took advantage of the discount and ordered the pages and the clutch itself (didn't feel the need to pay $5.00 for a binder that I already had ;) My clutch, giraffe with red trim, is back-ordered due to the popularity of the show, Extreme Couponing. But that didn't stop me from setting up my binder this weekend ;)
This week I'm back In the Studio (my kitchen studio that is ;) here at the Love Shack...taking a break from all that techy stuff! I'm really Lovin' It this Foodie Fridaywith a great grillin' recipe for this upcoming holiday weekend. This recipe is FAST and easy to follow (my favorite kind of cooking...yummy, fast and east ;) and would be great to take along with you to a backyard barbeque!
Grilled Asian Chops
Seriously...it takes longer to gather your ingredients than it does to grill the meat! The longest part of this recipe is waiting for the meat to marinade...and the longer you marinade it the better it tastes...so my advice is to fix it and forget it!
Almost an Extreme Couponer...with a total savings percentage of 56%
It was so satisfying to go shopping with my coupons in hand and my detailed list with good foods in mind. I really did feel like an Extreme Couponer as I handed the cashier my first 20 coupons (my store only allows 20 coupons per day to be tripled ;) and I found myself counting the "dings" as she scanned each one. Then I handed her the second batch of coupons that did not meet the criteria for being tripled...which were any with a value over $.99/cents or ones for free items...and watched as the balance due continued to decrease. Final Cost $52.71 for a total retail value of $117.45!
This week my favorite grocery store has triple coupons (up to .99 cents face value) and I was so excited to go shopping because I have been watching the TLC show Extreme Couponing...thanks to my niece Cortney ;)

Over two months ago I started The 6-Week Shape-Up with Rhonna and after week one...I failed miserably! As with most weight loss plans...I do really well in the beginning and then I drop off at the point where I have to keep up my food journal. So my thoughts were...this time, that if I turned it into an art journal, I might be inspired to keep it up...well...THAT did not work for me either!

It's Foodie Friday today and I'm Lovin' It because this is such a quick and easy recipe that tastes somewhat like the original Magic Bars but are easier to make because they are no bake like S'mores Bars. You can make them holiday related by adding Green Marshmallows (if you can find them) or by simply sprinkling them with holiday sprinkles...either way they are Magically Delicious ;)

Ever since I had this dish at Oceana Grill during our trip this month to New Orleans, it gave me the inspiration to try to make it myself! After all…how hard can it be since I already know how to make fettuccine alfredo…the only thing that was stopping me was the shrimp…cause I’ve always been afraid to (over)cook them myself. So I decided to play it safe when I found colossal frozen shrimp at Trader Joe's...because then...all's you have to do is quickly saute the shrimp with the spices to heat them through! Keep it simple sweetie...that is always my motto!
Today for Foodie Friday and Soup-a-Palooza I'm sharing another quick and delicous soup recipe that was inspired after our trip last weekend to the Big Easy ;)
This recipe for Chicken Tortilla Soup is one that we have adapted from several recipes over the years. We were looking for one that used as many fresh ingredients as possible and that was thickened naturally by pureeing the beans in lieu of using a thickening agent such as powder. ALSO I am not a fan of bell peppers or corn in my soups/chowders...but you could certainly add them if you are ;)

In the past I have been tempted to try this approach but never really looked into the process of selecting My One Word. However, this year I wanted to give it a try because I have already found myself drawn to the word "habits". I want to break any bad habits thay I may have and incorporate more good habits ;) Like when I recently posted about how the habit of having a positive attitude helps me perform my daily chores, or how the habit of balancing my bank statements on a monthly basis Works-for-Me, and then I talk about how I want to make it a daily habit of incorporating these Super Foods this year into our diet.

No matter what life situation you find yourself in...whoa is me, I'm having a pity party...the cycle of perpetucal complaining, where you ARE the victim...or in gossip circles, where you are Ms.Right...I could go on but I know that you get it ;) I find that if you just walk away and do something...anything...you always feel better about yourself and where you are in life.
Man...you can sure tell that I’m feeling better…because I’ve been cooking up a storm (and shopping for all the ingredients as well ;) The cold weather is making me want warm, comfort foods. However, I’m also taking our HEALTH into consideration so I am trying to make sure that most of the ingredients are organic and better food choices. This recipe is one that I recently found on another foodie’s blog, Olla-Podrida. Pattie and I often see recipe to recipe and we both appreciate our families’ favorites that have been passed down from one family member to the next. As was the case for her recipe called Willie’s Orange Bread that was one of her Grandmother’s favorite quick breads from the 70’s.
After reading Pattie’s recipe, I printed it and saved for a day when I’d feel like baking. You know it’s really cold when I start baking…because I’m not a big baker…that’s because I don’t crave sugar! Weird I know…but my vise is anything salty and crunchy. Muffins are as sweet as I get! I simply adapted a few of the recipe’s ingredients and came up with another great muffin recipe to add to my family’s archives..
Before the holidays I got a new cookbook, More Fast Food My Way, by one of my favorite European chefs, Jacques Pepin. Now the reason why I mentionEuropean is because I love the way most European chefs cook with REALfoods that are fresh and in season as opposed to a lot of American chefs...many of which are on the Food Network...whom use prepared foods that are canned and/or frozen and full of additives and preservatives. The following recipe for the stuffed pork tenderloin is inspired by Jacques recipe in his cookbook...only I've jazzed it up a bit by adding my own sauce...yummy in my tummy ;)

Well last week after watching all of David Wolfe's videos of The Longevity Now Conference I was really inspired with all that he had to share...even more so than when I first saw him in the movie, Food Matters. So off I went to the bookstore to find more information on Raw Foods and I found David's book, Superfoods. It is a goldmine of information and anyone who wants to live longer should have this book as a reference book in their home ;)
But more importantly it really helps you understand WHAT superfoods are; WHY they will improve your health; WHERE you can find them; and finally, WHEN and HOW TO include them in your daily diet. Following you will find the top ten products that David discusses in his book and he also includes some "honorable mentions" but for now I'm only concentrating of the top ten ;)

Today I'm blaming it all on Our Best Bites for featuring this recipe for Peppermint Candy Cane Brownies! Guess I was still feeling inspired by yesterday's National Chocolate Cover ANYTHING Day when I read that it called for chocolate and peppermint...lol That and the fact that I had a couple of brownie mixes on hand and decided that in lieu of making brownies from scratch like the original recipe calls for, I would improvise ;)

It's Foodie Friday and today I'm sharing a recipe with you all that I acquired years ago when attending a charity Tablescape show. Designers from the area decorated tables for the holidays and you paid a fee to attend. Hors d’oeuvres were served and all the fees received went to a local charity. Well, these Sausage Crescent Spirals were one of the Hors d’oeuvres and I begged docents to give me the recipe ;) I was so surprised that it only took 5 ingredients and that it could be prepared ahead of time so that if you are hosting in your home for the holidays THIS IS A MUST!
Besides the obvious! Bake some delicious cookies...oh yeah ;)

For the life of me...I have never understood people who have an aversion to eating left-overs? Are you one of them? Is it because your parents were descendants of the great depression (not really you know...they just liked to make us feel guilty ;} Did they constantly tell you to stop wasting food and/or that there were starving people in China? SO now you are rebelling cause you have your own house and your own rules and by God you have taken a vow to NEVER eat another left-over! Well I've got a news flash for you...you are really missing out on a lot of great meals!

Because you see, my mom’s “recipes” amount to two enormous—like, the most gargantuan I’ve ever seen—three-ring binders stuffed with plastic sleeves that contain every wonderful, fabulous recipe she’s used since The Dark Ages, or at least since around 1968. She still collects and tests recipes, so her plastic sleeves are updated with modern, interesting foods.
This Foodie Friday recipe originally came from a friend who made Turkey Tetrazzini every year after Thanksgiving. It was a great way to use up the white and dark meat (especially ;) that was always left-over and using left-overs is what makes this recipe quick and easy. Over the years I have tweaked it for my family by adding the vegetables that they like and using steamed chicken when I make a batch of it...like I previously posted about here ;)

This week I'm sharing my family recipe for traditional baked Macaroni & Cheese because my niece, Cortney, asked me why it didn't taste the same when she tried to make it herself. Poor thing...she was following my original recipe and over the years I've adapted it without writing it down...I do that ;(
I told her that I tend to add several different types of cheeses, depending on what I have on hand...but mainly it's three cheeses: cheddar, swiss and parmesan. So she played around with the recipe and she had great success. So when I saw her post I just had to make a batch myself and decided to write it down as I went this time.

This week I'm talking about how steamed chicken really works-for-me any day of the week! Whenever there is a sale of boneless, skinless chicken breasts at my favorite grocery store, I stock up and fill my freezer. AND if my freezer is TOO full...which happens ALOT now that we have a smaller refrigerator/freezer here at the Love Shack ;)...then I pull out my steamer and cook up several pounds of the chicken breasts. "WHAT'S a steamer"...some of you may be asking...well it is an electrical appliance that you can buy. I have had two different kinds over the years, one large and one small...and I like my smaller one the best. Mainly because it takes up less cupboard space and we just don't cook large enough quantities to warrant the larger one anymore.

This week I'm going to share with you a wonderful cooking technique that I learned a few years ago from a fellow co-worker (Thanks Ken ;) when Pre-cooked Bacon first became available in the grocery stores. I was lamenting at work one day about how easy this product was...and so much cleaner on my kitchen because once you got the package home the instructions called for "micro-waving" the bacon before using it for the optimal taste and crispiness...cool beans...I thought! My co-workers just laughed at me and said that they've been micro-waving bacon for years. What? I asked...without a fancy micro-wave cooking dish? Yes...they simply place their bacon on paper towels and micro-wave it until it done to their liking. SO...ever since then I've been cooking my bacon this way even thought I do NOT advise cooking anything in a micro-wave ever since learning that the inventor himself does not use one in his home because he wasn't sure how the micro-waves ultimately affected the molecules in our food. THEN the health industry started advising that you only use glass dishes and NOT plastic when cooking in them. OH BOY ;} So once a month, or less, I cook my bacon in the micro-wave with glass plates and paper towels and try not to think about the restructuring of the bacon molecules...maybe restructuring the bacon fat is a good thang ;)
Well I'm back to blogging and finding comfort in cooking this week! Still feeling a little melancholy and we have been having really bad thunderstorms this week so I decided to roasted a chicken in the oven and make a batch of home-made gravy.
Nothing better than smelling a chicken roasting in the oven all afternoon and a pot of stock simmering on the stove-top! Now I'm sharing it all with you today by linking up with Michael Lee on her weekly blog feature: Foodie Friday:

Last week for my Foodie Friday's post I showed you all how we do some fantastic Grillin' here at the Love Shack :}
Well...as you can in the above photo...I pulled another marathon! Grillin' Marathon that is by cooking alot of food for just DH and myself here at the Love Shack :D Those who know me well...know this about me...I usually call this POWER COOKIN' and I have cooked this way since my boys were little and I was a single, workin' mum. I would cook all weekend so that I'd have food ready for meals during the week when things were hectic and I was trying to get the boys fed, bathed and ready for the next day. I mentioned this before when I showed you all how I make Cheesy Barbecue Meatloaf.
This week I'm showing my family the Basics of Grillin' here at the Love Shack because the weather is perfect and whe n you use the grill it usually means less clean-up after dinner and I'm all for that! This time of year we stock up on aluminum foil because it becomes our favorite cooking utensil for roasting vegetables and fish in-on the grill.
