This week I'm back In the Studio (my kitchen studio that is ;) here at the Love Shack...taking a break from all that techy stuff! I'm really Lovin' It this Foodie Fridaywith a great grillin' recipe for this upcoming holiday weekend. This recipe is FAST and easy to follow (my favorite kind of cooking...yummy, fast and east ;) and would be great to take along with you to a backyard barbeque!
Grilled Asian Chops
Seriously...it takes longer to gather your ingredients than it does to grill the meat! The longest part of this recipe is waiting for the meat to marinade...and the longer you marinade it the better it tastes...so my advice is to fix it and forget it!
GATHER YOUR INGREDIENTS:
- 3-4 Thick Center-Cut/Boneless Pork Chops
- 1 Whole Lime (or 2 Tablespoons lime juice)
- ¼ Cup Soy Sauce
- ¼ Cup packed Brown Sugar (light or dark)
- ¼ teaspoon Cayenne Pepper
- ¼ teaspoon Curry Powder
- ¼ teaspoon dry Ginger
- ½ teaspoon minced Roasted Garlic
Remove the Chops from the store packaging and rinse and pat dry with paper towels; season well with salt and pepper. Place in a dish deep enough to pour the marinade over so that they can marinade in the dish.
Combine the soy sauce, brown sugar, cayenne pepper, curry powder, ginger and roasted garlic in a glass dish or shaker container. Squeeze the juice from the fresh lime removing the pulp (or keep it if you like it ;) and combine it with the rest of the ingredients. Pour the sauce over the chops, cover and marinate at least 3-4 hours (or overnight) in the refrigerator.
When you are ready to grill your chops, spread or spray some oil onto your grill rack and pre-heat your grill on high for about 5 minutes. Then place your chops onto the hot grill…hear the sizzle ;)
Reserve the marinade juice that the chops have been marinating in…{don’t worry we are going to cook this thoroughly before using it after having raw meat marinating in it ;} and CLOSE the grill cover and set the timer for 5 minutes. During this time, place the reserved marinade juices in a pot on the stove and turn the heat up high to bring it to a boil. Be sure to watch it so that it doesn’t boil over…once it comes to a full boil, reduce the heat and slowly simmer the sauce to thicken it while your chops are on the grill.
When the timer goes off…flip over your chops on the grill and get the other side seared…again…close the lid and set your timer for 5 minutes.
When the timer goes off again you can lift the grill lid and then begin to stand up your chops so that you can sear ALL SIDES of your chops. This should take about 5-10 minutes depending on the thickness of your chops.
ONCE you have seared ALL sides you can remove them from the grill and pour your reduced sauce right on top of your chops…Yum! It's sweet and a little spicey and NOT too salty...just right!
Your chops are done when you cut into the centers and the juices run clear but your chops are still slightly pink. Or 170 degrees internal temperature if you have a meat thermometer.
Serve with broccoli and brown rice…yum! Sorry, but I do not have any beautiful pictures of all of our food arranged on our plates to share with you all. That would be...because DH was too hungry to wait for me to take "damn pictures"...he can get kinda grumpy when he is hungry ;)

hmmmm...I have a pork roast in the freezer I was wondering how to fix it...might have to marinade it or throw in in the crock pot with these ingredients and see what happens!

Go ahead and TOSS it into the crockpot...this would be really GOOD...just cut your pork loin into chunks/cubes and toss it all into the crockpot on low for 6-8 hours and it will be great ;)

Yup, Carl hates it when I pause to take pictures of the food. Those look great. I'mm still working on building a collection of spices...I don't have curry and a few others on hand yet, but hopefully with a good sale and a coupon I can make it happen son.

You can also tenderize the meat before marinating. This will open the pores and let the marinade seep in. Overnight marinade is the best. I prefer the simple marinade combination of soy sauce and lemon or vinegar. Sometimes, I add tomatoes and jalapeno, but that's optional. Cooking them on the charcoal grill is my favorite, as it drains the fats and makes those beautiful grill marks. Marinated meat is perfect with stir fried veggies and rice.
